RESEARCH INTERESTS
My research interests include: Isolation and production of novel glycosyl hydrolase enzymes like α-galactosidase, β-galactosidase, mannanase, chitinase, amylase, xylanase, pullulanase and others from different micro-organisms especially food-grade and thermophilic bacteria and fungi. Development of robust and efficient purification methods and biochemical characterization of purified enzymes with a view of obtaining industrially relevant enzymes of desirable physicochemical properties. Elucidation of the structure-function relationship of novel microbial enzymes will in order to understand their mechanism of action. Use of recombinant DNA technology for cloning novel genes encoding the enzymes and high-level expression in heterologous hosts. Investigation of potential applications of purified enzymes in food industry for removal of non-digestible oligosaccharides from legumes, production of low-lactose milk and for conversion of whey waste/lignocellulosic waste into value-added products (For e.g. galacto/chito/manno-oligosaccharides). Improvement of enzyme properties by immobilization on suitable matrices and directed evolution.
